Recipe: Halupki (Pigs in the Blanket)
Halupki is also known as “pigs in the blanket” or stuffed cabbage. This is my mother in law’s recipe for the traditional Polish dish.Ingredients:
- 14 to 16 cabbage leaves
- 1½ pounds ground beef
- ¼ cup uncooked white rice
- 1 onion, diced and sautéed
- 1 egg, beaten
- 1 teaspoon salt
- 2/3 cup brown sugar
- ¼ cup water
- 1 can (15 ounce size) tomato sauce
Directions:
Boil cabbage leaves for five minutes and drain. Combine meat, rice, onion, egg and salt. Put one tablespoon of mixture in each leaf and roll. Place in a large pot. Combine sugar, water and tomato sauce and pour over cabbage. Bring to a boil, then simmer for 1½ to 2 hours.
Hint: If you place cabbage leaves on the bottom of the pot the piggies won’t stick to the bottom.
