Recipe: Easy Oven Beef Stew
This is a great recipe that feeds a crowd. I’ve made it several times when my husband has his family over working on the house.
You’ll need these ingredients:
- 1½ pounds cubed beef (stew beef)
- 5 peeled and cubed potatoes
- 5 peeled and cubed carrots (or use the cleaned baby carrots, no need to cut them – I just put in a few handfuls)
- 2 cups chopped celery
- 4 tablespoons Minute Tapioca
- 1 package onion soup mix
- 1 tablespoon sugar
- 1½ cups tomato juice
- 2 cups water
Place the beef, potatoes, carrots and celery in a large casserole dish. Mix together soup mix, sugar, juice and water and pour over top. Cover and bake at 275 degrees for 3½ to 4 hours.
