Recipe: Walnut Cup Cookies

This is a great recipe that my husband loves.  It is a little time consuming so I only make it for holidays and special occasions.  The name of the cookie is walnut cups, but they have a very sweet, almost maple syrup like flavor to them when they are finished.  The recipe makes about 96 cookies.

Directions for cookie shells:

Prepare the dough for the cookie shells first.  Since this dough is very stiff and hard to work with, I halve the recipe and make two batches of dough. 

You’ll need:
2 8 oz. packages of cream cheese, softened
4 sticks butter or margarine, softened
4 cups flour

Cream butter and cream cheese until smooth.  Add flour, mix well.  Cover and chill at least one hour or overnight.

Directions for making the cookie filling:

You’ll need the following:
1 1-lb. box brown sugar
4 eggs
4 tablespoons butter or margarine
3 cups ground walnuts
1 teaspoon vanilla

Cream butter and sugar.  Add eggs and vanilla.  Add ground walnuts.

Assembly instructions:

Shape dough into 1 inch balls.  Place 1 each in mini muffin pan (do not line cups with paper).  Press in bottom and up sides of each up (a medicine cup dispenser works really well, or use Pampered Chef’s tart press).  Spoon 1 teaspoon nut mixture into each cup.  Bake at 350 degrees for 20 to 25 minutes or until shells are light golden brown.
