Recipe: Pigs in the Blanket casserole (unstuffed Halupki)

If you love Halupki (Pigs in the Blanket) then you’ll like this Pigs in the Blanket casserole.  It’s easy to make and a nice twist on a traditional dish.

Ingredients:
1 pound ground beef
1 onion, chopped fine
1 medium head of cabbage, chopped
1 ½ cups uncooked rice
1 can tomato soup
1 can of water (fill tomato soup can)
salt and pepper to taste

Directions:
Preheat oven to 350 degrees.  Grease a 9 X 13 baking dish and layer cabbage on bottom.  Brown the beef and onion together, drain.  Stir the rice into the ground beef mix and pour over the cabbage.  Season with salt and pepper, to taste.  Combine the tomato soup and can of water and pour over the casserole.  Cover the dish with aluminum foil and bake for about 1 hour.
