Recipe: Very easy stuffed chicken breasts
I worked with a graduate of a culinary school a few years ago. He gave me a few ideas for simple recipes that didn’t require a lot of work, or that could be prepared ahead of time and cooked on another day. This is one of the recipes he gave me and I’ve used it many times.
The ingredients are very simple:
Chicken Breasts (pounded thin)
Stuffing (either homemade or box stuffing, prepared according to directions)
Place stuffing in the center of the chicken breast. Roll the breast and place with the end side down in a greased foil loaf pan.
You can fcook the breasts right away (350 degrees for 45 minutes or until done) or freeze the chicken breasts in the loaf pans and cook directly from the freezer for 60 to 80 minutes in a 400 degree preheated oven.
